UNY Students Develop Chinese Petai Noodles as Alternative Food for Diabetics

Students of Yogyakarta State University (UNY) innovate processed food ingredients in Chinese petai noodles called Beta Health Noodle. This food is suitable for people with diabetes because it contains tannins, galactomannans, and flavonoids that can lower blood sugar levels. The idea of ​​making this processed food originated from the concerns of students because diabetes is still a deadly disease. Diabetes is ranked third after stroke and heart disease. 

Chinese petai noodles are made as an effort to treat this disease using herbal ingredients. Meanwhile, in the community, plants with the Latin language Leucaena leucocephala grow a lot in people's gardens. Meanwhile, Chinese petai seeds have not been widely used, only for snacks. Due to this condition, a group of UNY students innovated in food processing. They consist of Ahzami Fadilah Akbar Electrical Engineering Study Program, Intan Diah Kusuma Catering Education Study Program, Wulan Febrianingsih Science Education Study Program, Siti Vera Lestari Mathematics Education Study Program, and Asma Nur Azizah English Literature Study Program.

"We are developing Chinese petai into healthy noodles as a substitute for staple foods for diabetics," said Ahzami Fadilah Akbar, Wednesday (10/13/2021).

Chinese petai seeds contain tannins, galactomannans, and flavonoids that lower blood sugar levels by inhibiting the activity of glucosidase and alpha amylase, which play a role in absorption in the intestinal brush border membrane. 

Noodles made from wheat contain large amounts of carbohydrates but little protein, vitamins and minerals. To increase its nutritional value, add vegetables to the raw material for making noodles, replace flour, or add other additives. This product is named Beta Health Noodle. The manufacturing process is to clean the Chinese petai seeds using running water. These seeds are then boiled until soft and drained. Then blended until it becomes a powder and then sifted and then roasted for ± 5 minutes. 

Mix the eggs into the Chinese petai seed flour and then add the flour and starch with a little water. Finally, mix with cooking oil and salt. This dough is then ground until smooth, and the noodles are ready to be cooked. This work won a Silver Medal at the 2021 World Invention Competition and Exhibition organized by the Young Scientist Association (IYSA) and SEGi College Subang Jaya Malaysia. (Kuntadi,ts-DNA)
